Baccala' Campagnolo

Cod in Tomato Sauce

Ingredients

Baccala’ (cod): 4 pieces, 2.5cm/1 inch thick

Flour: 2-3 tbsps

Garlic: 2 cloves, crushed

Onion: 1 small, chopped

Olive oil: 25ml

Oregano: 1 tbsp, dry

Tomatoes: 2 cans x 400g each

Sugar: 1 tbsp

Worcestershire sauce: 1 teaspoons

Chilli flakes: ½ teaspoons

Capers: 1 tbsp

Gaeta olives: 12 – 15, pitted and chopped

Preparation

Prepare the tomato sauce first.

Heat half the olive oil in a pan and sauté the garlic and onion gently until the onion is translucent and the garlic begins to colour. Add the tomatoes, sugar and salt, and simmer for about fifteen minutes. Add the Worcestershire sauce. Check the seasoning and set aside.
