Banana Blossom (BANANA HEART) SALAD
1 red banana heart, tough parts removed, shredded, soaked for 30 minutes in cold water with salt and juice of 4 limes with the peel
2 Tbsps. lime juice
150 grams ground pork
150 grams shrimps, peeled and chopped
1/2 of a panucha cheek, chopped or 1/3 cup brown sugar, adjusted to taste
3 Tbsps. patis (fish sauce)
2 Tbsps. brown sugar
1/4 cup roughly chopped wansuy (cilantro)
1/4 cup finely chopped spring onions
1 red chili, finely sliced
3 Tbsps. roasted crushed peanuts
coconut cream, heated for drizzling
