Quinoa Vegetable Soup

Ingredients:
1 cup quinoa, rinsed
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can diced tomatoes
6 cups vegetable broth
2 cups chopped kale or spinach
teaspoon dried thyme
Salt and pepper to taste
Preparation:
â1. âIn a large pot, sauté onion, carrots, celery, and garlic until softened.
â2. âAdd diced tomatoes, vegetable broth, quinoa, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
â3. âStir in chopped kale or spinach and cook for an additional 5 minutes until wilted.
