Shepherd’s Pie

This old world pub meal has become an American favorite. Sitting down to a hearty plate of ground beef, mashed potatoes, veggies, and a thick gravy, all wrapped up in a flaky, delicious pie crust will please your entire crowd. Shepherd’s Pie is my standby for using up all those leftovers, especially mashed potatoes, and you can really include any vegetables you have—it doesn’t have to be the standard fare. Ingredients

½ pastry crust recipe (page 224)

1–2 lb. ground beef, cooked (leftover)

4–6 cups mashed potatoes (leftover) or cook and mash 4 large potatoes

1–1½ cups leftover veggies of your choice, or 10 oz. frozen mixed veggies, thawed + 1 Tbsp. dried minced onion

3–4 cups leftover gravy

4–6 slices cheddar cheese
