STEP 4: You want to be careful with this one. Take your wok and pour out the excess oil into a heatproof container. “Heatproof” is the key here, as oil takes about an hour to fully cool, meaning you can’t just throw it out right away. Clean up anything that remains in the wok using paper towels, as you don’t want your hands to come directly in contact with the meat or the heat.

STEP 5: Using the same wok, heat the remaining 1 tablespoon of oil that you set aside for stir-frying. Add the garlic and ginger to the wok and stir-fry for about 20 seconds (just so you can start to smell their potent aromas). Next, add in the pineapple chunks and sauce. Stir everything together so that the vegetables are coated. Then, remove the heat to simmer the sauce for a couple minutes, or just until the pineapple starts to become tender (for canned pineapple, it will only take a minute). Last, put your pork back in the wok and mix everything together. Once mixed, put on a plate and serve!
