Heat 2 tablespoons of the oil in a frying pan or karahi over a high heat. When visibly hot, stir in the sliced doner meat and fry, stirring from time to time, until crispy in places; this should take 5â10 minutes. Transfer to a plate.
Add the remaining oil to the pan and stir in the chopped onion. Fry for about 5 minutes, or until soft, translucent and lightly browned. Stir in the garlic and ginger paste and fry for another 30 seconds and then add the ground spices. Mix well so that the onions are nicely coated and then add the beef stock or water, shatkora rinds and naga pickle and simmer for 5â10 minutes, or until you are happy with the sauce consistency. It should not be too wet.
Stir in the quartered tomato and fried doner meat. Add salt to taste and garnish with the chopped coriander. This spicy doner mixture is delicious served wrapped in hot rotis or naans, topped with salad and squirted with some kebab-shop sauces.
