Beef Braised in Red Wine
This is known as Boeuf Bourguignon in French, beef cooked in the style of Burgundy, the region known for its robust red wines. Any hearty red table wine will work nicely in this dish.
1. Heat oil in a large stew pot over high heat. Brown shallots, onions, and mushrooms until tender. Toss beef in flour to coat evenly, and shake off excess. Add to the pot, and brown on all sides. Work in batches if necessary and do not crowd meat in the pan.
2. Add thyme, bay leaf, and wine; bring to a boil, then reduce heat to low. Cover and cook at a bare simmer for two hours until meat is tender. Just before serving, add cognac and simmer for 10 minutes. Season with salt and pepper.
