Fragrant yellow rice

This is a rice dish for special occasions. As the name suggests, the rice is tinted yellow with saffron, hinting at its Muslim origins. Turmeric can also be used. The rice is wonderfully aromatic, and the temper adds sweetness and texture. This rich, flavoursome dish is interesting enough to eat on its own, without any accompaniments. You will often find sultanas scattered on top of this dish. I have omitted them as I don’t like sultanas with my savouries, but I know I am in the minority on this one. If you want them, add 20 g (¾ oz) sultanas (golden raisins) when you stir in the cashews to the temper.
