14. Chicken Breast & Zucchini Salad

A simple and delicious salad with pecans and parmesan cheese.

Makes: 4 servings

Prep: 15 min

Cook: 3 hrs.

Ingredients:

1 cup plus 1 tablespoon olive oil

½ kg boneless, skinless chicken breasts

5 zucchinis, thinly sliced

¼ cup fresh lemon juice

½ red onion, thinly sliced

Coarse salt and ground pepper

1 cup chopped pecans

15 ounces spinach, chopped

½ cup grated Parmesan cheese

½ cup chopped fresh mint

Directions:

Whisk together lemon juice and ¼ cup oil then season with pepper and salt.

Add zucchini to the slow cooker and toss to coat.

Marinate as you cook chicken.

Heat remaining oil set slow cooker on high and cover.

Cook chicken for 3 hours.

Season with pepper and salt. When cooked slice thinly.

Toss chicken with onion, parmesan cheese, pecans, spinach, mint and zucchini mixture.

Enjoy your meal.
