1. Preheat the oven to 365°F. Use olive oil to grease an 8-inch round cake pan and dust with flour. Trace the pan on parchment paper, cut out the circle, and lay on bottom of greased pan.
2. Combine dry ingredients in a mixing bowl. In a separate bowl, pour in oil and then zest in citrus. Add juice (or apple cider vinegar) and yogurt and whisk until combined.
3. In a small bowl, whisk eggs with a fork. Combine with wet mixture and whisk again. Pour into the bowl with dry ingredients and fold/stir with a spatula until nearly all mixed.
4. Pour into the cake pan and smooth out any surface lumps with a spatula or spoon. Place on the bottom rack of oven and bake for 15 to 20 minutes. Rotate the pan and bake for another 5 to 10 minutes. Move the pan to the top rack and finish baking for 15 to 20 minutes. Remove from oven and let rest once finished. When fully cooled, tap sides of pan on table or counter to pop out the cake.
