Missouri: Butter Cake

This butter cake is rich, sweet and buttery and is the best-ever festive treat.

Ingredients

Nonstick cooking spray

Crust:

1 (15-ounce) box vanilla cake mix

1 large egg

6 tbsp butter (melted)

Filling:

8 ounces cream cheese (softened)

2 large eggs

¼ cup butter (melted)

2 tsp vanilla essence

Pinch kosher salt

1 (16 ounce) box confectioner’s sugar

Confectioner’s sugar (to dust)

Directions:

Preheat the main oven to 350 degrees F. Spritz a 13x9” inch baking pan with nonstick cooking spray.

In a large bowl, beat together the cake mix, egg, and melted butter. Press the mixture into the base of the prepared pan.

In a second bowl, using an electric hand whisk, beat together the cream cheese, eggs, melted butter, vanilla essence, and salt. In batches, beat in the confectioner’s sugar.

Pour the mixture over the crust. Place in the oven and bake for 40 minutes until puffed up, the center should be gooey.

Take out of the oven and allow to cool.

Dust with confectioner’s sugar before slicing and serving.
