Skillet Tomatoes and Zucchini

2 small zucchini, sliced

1 medium onion, thinly sliced

2 tablespoons butter or margarine

2 medium tomatoes, thinly sliced

1/2 teaspoon garlic salt

1/4 teaspoon dried basil

dash of pepper

2 to 3 teaspoons salt

1/4 cup grated mozzarella cheese

1 cup seasoned croutons

In a large skillet, saute zucchini and onion in butter until tender. Add tomatoes and seasonings. Cover and simmer 3 to 5 minutes, or until tomatoes are tender. Remove from heat and sprinkle with cheese and croutons. Cover 2 to 3 minutes, or until cheese has melted. Makes 4 servings.
