Ham and Bean Soup

You can give this ham and bean soup a try because it has a good and delicious combination of cod fillet and a savory sour sauce.

Ingredients (6 servings)

1 small onion, chopped

1 tablespoon canola oil

3 cups cooked ham, cubed

2 cans (16 oz.) refried beans

1 can (14 ½ oz.) chicken broth

1 can (11 oz.) Mexican, drained

1 can (7 oz.) white corn, drained

1 can (4 oz.) green chiles, chopped

½ cup salsa

1 teaspoon Caribbean jerk seasoning

1 can (2 ¼ oz.) ripe olives, drained, sliced

⅓ cup lime juice

Sour cream and lime slices

Preparation

Sauté the onion with oil in a Dutch oven for 4 minutes. Stir in the jerk seasoning, salsa, chiles, corn, broth, refried beans, and ham. Then cook to a boil. Reduce its heat and cook for 5 minutes with occasional stirring. Stir in the lime juice and olives and then cook until warm. Garnish with the lime slices and the sour cream. Serve warm.
