In a small bowl, whisk together the olive oil, vinegar, mustard, honey, garlic, and salt.

Pour the dressing over the cauliflower mixture and mix well.

Divide the lettuce equally among 4 bowls. Top each bowl of lettuce with 1 cup of the cauliflower mixture.

Variation Tip: Instead of sunflower seeds and cherries, try ½ cup chopped pecans and ⅓ cup dried cranberries.
