Sunchokes
You may have heard of this vegetable by an older name, Jerusalem artichoke. Sunchoke, though less common, avoids the confusing reference to the artichoke, which this is not, and Jerusalem, with which it has no connection. It is, however, a type of native sunflower, with cheerful yellow flowers and tall majestic growth. Underground, the plants form clusters of little potato-like brown tubers, which grow more numerous as the plants multiply. That’s the part we eat.
Roasted whole, these sunchokes will be crisp on the outside and soft within.
