Jerusalem is a huge melting pot. It is where I was born and raised ā€” a city that has been occupied by almost every Empire in history, which mixes Jews from all over the world, Muslims and Christians. There are Ashkenazi Jews from Eastern Europe and Russia; Sephardi Jews originally from Spain and the Maghreb (North Africa); and my gang, the lesser-known Mizrahi (eastern) Jews, from Yemen to Turkey, Jordan to Lebanon, Syria to Iran.

Our journey starts with the mass exile of the Israelites from Judea in 70ad. Finding themselves scattered from Spain to Russia, from Germany to Yemen, they created new communities, assimilating within each region. The threads that continued to bind Jewish communities around the world were their religious customs, Jewish culture and food: special dishes cooked for holidays, the Sabbath, weddings and memorial days.

The Mizrahi gang has been settled in their region for the longest of the three tribes, with little movement over their 2,000-year history. They bonded with their indigenous communities, sharing folklore and ways of life, and in many respects have more in common with our Arab brothers than with Ashkenazi Jews.

In 1492 the Spanish Inquisition ordered the expulsion of all Jews from Spain. This spread the Sephardic Jews across Morocco, Tunisia, France and Italy, again adapting and absorbing elements of new cultures and cuisines. From the late 19th century the Ashkenazi Jews began to return to Israel. This culminated in a huge influx from Europe following World War II, when Jews finally had a home to return to after 2,000 years of exile.

Iā€™m the luckiest chef alive. Unwittingly, effortlessly, I have been exposed to a wealth of cuisines ā€” in effect traveling without moving. With The Palomar, the journey continues.
