The mixture of coconut milk and curry pepper gives this soup a unique flavor that makes it addictive. I like to take this to work for lunch and eat it with some green salad on the side.

Ingredient List:

½ ounce peanut oil

1 chopped onion,

½ ounce fresh ginger, minced

1 chopped clove of garlic,

¼ tsp. fenugreek seeds

8 ounces red lentils, dry

8 ounces peeled butternut squash, seeded and cubed

2 ½ ounces fresh cilantro, finely chopped

16 ounces water

7 ounces coconut milk

1 ounce tomato paste

1 tsp. curry powder

1 pinch of cayenne pepper

1 pinch nutmeg, ground

A pinch of salt and pepper
