Apple, Spinach & Eggs Salad

Serves 2

Ingredients - Allergies: SF, GF, DF, NF, V

• 4 quartered hard boiled eggs

• 2 granny Smith apples, chopped

• 2 cups spinach

• 1/2 cup ground hazelnuts

Dressing:

• 1 tbsp. olive oil or avocado oil

• 1 tbsp. fresh lemon juice

• pinch of black pepper

• pinch of sea salt

Instructions: Mix all ingredients, top with ground hazelnuts.

Artichoke, Arugula & Lamb Salad

Serves 2

Ingredients - Allergies: SF, GF, DF, EF, NF

• 1 cup sliced roasted lamb

• 1 cup roasted quartered artichoke hearts.

• 1/2 cup chopped red onion

• 1 cup Arugula
