Potato Salad with Chives
A potato salad is an ultimate crowd pleaser – everybody loves it! Make your recipe extra delightful with the wonderful addition of chives and pack it next time you are going out on a picnic. You would not have to worry about spoilage because this recipe sans the need for mayonnaise. That means, it’s healthier, too.
Serving Size: 6
Prep Time: 25 mins
Ingredients:
• 2 lbs. new potatoes
• ½ cup fresh chives, chopped
• 2 tbsp fresh flat-leaf parsley, chopped
• 1 tsp Dijon mustard
• 2 tbsp white wine vinegar
• 1/3 cup olive oil
• Kosher salt and black pepper to taste
Instructions:
1. Boil potatoes until tender in a bowl of salted water. Cool down by rinsing and running it under tap water.
2. when they are cool enough, cut the potatoes into quarters.
3. Meanwhile, place the rest of the ingredients in a food processor, except for the parsley. Pulse until smooth.
4. Toss sauce onto potatoes, garnish with parsley, and you are ready to pack or serve.
