St Brigid

Having probably started out as the important Celtic goddess Brigid, whose feast Imbolc at the start of February heralds the coming of spring, St Brigid in her Christian guise is the patron saint of Irish dairy.

St Brigid the cheese has a very distinctive square loaf shape resembling German Tilsiter. During its maturation period, the cheese is turned daily and brushed with a brine solution that encourages the development of beneficial bacteria on the rind, giving it its orange-red colour. The pate is semi-hard and quite elastic in texture, a buttery yellow in colour and liberally specked with air holes.

In its youth, the cheese is quite mild and as such finds favour with those who are not fond of stronger cheese. Mild it may be, but bland it is not. Mildly creamy, with a slight barnyard note on the nose, the flavour profile is buttery and creamy, and has a subtle complexity, with decent length and a slight saltiness on the palate.

As it ages, the flavour becomes more pronounced, developing vegetal notes without becoming aggressive.

A substantial quantity of the cheese is exported to Scotland, where it is popular.
