¾ cup of onions, chopped

1 tablespoon of oil, olive

8 chopped garlic cloves

2 cups of water, filtered

1 lb. of rinsed, trimmed, chopped collard greens

1 tablespoon of lemon juice, fresh

1 & ½ cups of sliced bell pepper, green

2 tablespoons of minced ginger root, fresh

1 teaspoon of salt, kosher

½ teaspoons each of ground allspice, paprika and ground turmeric
