Russian Beet with Herring Salad

Yellow onion, chopped ½

Washed with tops and bottoms removed, 2 beets

Mayonnaise 6 tbsp.

Carrots peeled 2 large

Jar herring fillets, packed in oil 1 (12 ounces)

Whole russet potatoes 3

Salt and ground black pepper to taste

How to Cook:

Take a huge water pot to a bubble.

Cook the carrots, beets, and potatoes in the bubbling water until they are cooked yet firm, in 15-20 minutes.

Allow each of these to cool.

Remove them while discarding their skins. Shred the beets, carrots, and potatoes and keep all of these separate.

Arrange onions and herring fillets (half) making a layer in a bowl.

Cover these with grated potatoes, carrot, and beet (each of these should be half quantity).

Spread mayonnaise 3 tbsp on salad and season with pepper and salad.

Repeat all the layers similarly for the rest of the quantity.

Cover in plastic wrap. Chill in your fridge for an hour and serve cold.
