Minty Pea Dip

DIFFICULTY: Easy • MAKES: 2 cups

This one comes straight from a trip to London and a plate loaded with fish and chips. On the side, the restaurant served a traditional English favorite of mushy peas—sweet, delicious mashed-up peas. They were a light counterpoint to the heavy fried fish, and I knew right away that with a few additions, they’d become the perfect dip alternative to hummus or guacamole. It’s easy to make and goes just great with pita chips or as a side on its own.
