SOME GUYS WHO ARE DOING IT RIGHT

Swiss Meat and Sausage Company in Hermann, Missouri, makes some of the best bacon that a breakfast lover’s money can buy. And the popularity of their cured meats has gained them a lot of national recognition recently. Their big break was a couple of years ago when they were featured on a show on the Food Network. The Food Network had warned them that when the show aired they’d get really busy, but they didn’t anticipate the level of response. “The very first time the show aired, we had more than 15,000 requests on our Web site,” said owner Mike Sloan. “So we funneled our way through those and got caught up. And then they ran the show again. They ran it ten or twelve times. So we would watch the Internet and when our episode was coming up, we would get ready. And it wasn’t our bacon or sausage products we were running out of, it was our dry products—coolers, cardboard boxes, dry ice—things we couldn’t make here. But it was a good problem to have!” When the Bacon Nation catches wind of good bacon, there’s no holding them back.

Another business that has benefited from the power of the Food Network is Matt’s Big Breakfast in Phoenix, Arizona. Not so long ago, Matt’s was one of the best-kept secrets in downtown Phoenix. If you didn’t live in downtown Phoenix, chances are you had no idea this gem existed. Unfortunately, Matt’s is no longer a secret at all. After extensive media coverage and an appearance on the Food Network, the wait to get into the restaurant on a weekend morning can now be more than two hours. And the only place you can wait is outside—including in the middle of summer when it is a scorching hot day in the Sonoran Desert. But devotees will wait because it is just that good. Besides, it’s a dry heat (yeah, right…).

Matt’s Big Breakfast is a family run business. Matt and Erenia Pool are one of the most popular couples in downtown Phoenix thanks to their cheery restaurant, and they’re often seen behind the counter serving customers themselves. Their constant presence at the restaurant is particularly impressive because they also own a bar down the street and are often serving wine at 10:00 P.M. to the same customers they served breakfast to at 10:00 A.M. It’s a mystery as to when these people sleep because not only do they run two of the most popular businesses in downtown Phoenix but they are personally involved in those businesses on a daily basis. But Phoenicians are grateful for their infinite energy.

Matt’s is located in a restored house that is not much more than 1,000 square feet in size—hence the reason for the big lines. The action is centered around an orange 1950s-style bar where the staff ensures that your juice glasses and coffee mugs are always full, regardless of how busy and harried they may be. Even though they’d
