Your World Chicken with Mushrooms

SERVES 4

Life can get a little hectic sometimes, so it’s always nice to take some time, take a few deep breaths, and do something that’s just for you. Ready in about the length of an episode of The Joy of Painting, this recipe is flavorful, but not too overwhelming or difficult, and a wonderful restorative that you, and you alone, can control.

½ cup/60 g all-purpose flour

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

1 tablespoon Italian seasoning

4 boneless, skinless chicken breasts

2 teaspoons olive oil

3 tablespoons/40 g unsalted butter

8 ounces/230 g mushrooms, sliced

1 small onion, chopped

1½ cups/360 ml chicken stock
