15 – Turkey Tahini Pitas

This turkey pita can be made with leftovers from Thanksgiving. The combination of flavors works much better than cranberry sauce and mayonnaise. You can make it any time of year, too.

Makes 4 Servings

Cooking + Prep Time: 50 minutes

Ingredients: • Non-stick spray

• 1 tsp. of cumin, ground

• 1 tsp. of paprika, sweet

• 1/4 tsp. of salt, kosher

• 1/4 tsp. of turmeric, ground

• 4 x 4-oz. cutlets of turkey

• 4 x 6” pitas, whole wheat

• 1 cup of cucumber, sliced thinly

• 1 cup of bell pepper, red, sliced thinly

• 2 tbsp. of tahini– may be found as sesame seed paste

at your local market

• 2 tbsp. of low-fat yogurt, plain

• 1 & 1/2 tbsp. of lemon juice, fresh

• 1 tbsp. of water, filtered

• 1/2 tsp. of pepper, black, ground

Instructions:

1. Heat skillet on med-high. Coat with non-stick spray. 2. Combine the paprika, cumin, turmeric and salt in small sized bowl. Rub the mixture of spices over turkey evenly.

3. Combine tahini and rest of ingredients in small sized bowl and stir with whisk. Slice the turkey.

4. Add turkey and veggies to pitas. Place pitas in sandwich press. Cook for four to five minutes, till pitas have browned a bit. Serve with the tahini mixture.
