BAKED STUFFED TOMATOES WITH COUSCOUS, PEAS, AND FETA CHEESE
A choice dish at the end of the summer when fat, juicy tomatoes are abundant. Serve this with a green salad and French bread.
4 large tomatoes
1 cup couscous
1½ cups boiling water
¼ cup plus 1 tablespoon olive oil
3 garlic cloves, minced
1 cup frozen peas, thawed
½ cup grated Parmesan cheese
1 cup (about 5 ounces) crumbled feta cheese
¼ cup minced fresh parsley
½ teaspoon dried oregano
Freshly ground black pepper to taste
