Roast Beef Salad Supper

In the 19th century, dinner (or supper, as it was properly called) was usually a light fare. As the saying went, “Breakfast like a king; lunch like a prince; dinner like a pauper.” People worked hard and ate their calories early in the day. A light beef salad would have been very welcome and appropriate for guests in the evening. We added some celery to this recipe for crunch, although the humble celery was a bit of a luxury to people like the March family.

Mayonnaise wasn’t sold in commercial jars in America until 1907, although it has been a popular condiment in France since the 18th century. Women would have made their own before that. For convenience sake, we suggest you use store-bought mayonnaise.

Servings: 4

Ingredients:

3 chopped celery stalks

3 tbsp. mayonnaise

3 tbsp. chopped pickles

3 tbsp. chopped onion

Salt and pepper to taste

Dash of garlic powder

8 slices of bread

1 cup chopped cooked beef (see the left-over roast beef recipe below)

Directions:

1. Stir beef, mayonnaise, carrot, onion, celery, black pepper, salt, and garlic powder in a bowl until thoroughly combined.

2. Spread the salad onto 4 slices of bread and cover each with another slice.
