TASTY SRI LANKAN DAL PARIPPU (COCONUT LENTIL CURRY)

Parippu is a staple Sri Lankan dish. This gorgeous lentil curry smells divine and offers a delicious blend of spices and creamy coconut milk. It is commonly eaten in Sri Lanka for breakfast with some warm, round rotis but works equally well as a cozy lunch or dinner dish. Parippu is usually cooked with masoor daal, or red lentils. They are incredibly rich in protein and offer many health benefits like blood sugar control, cholesterol reduction and anemia prevention. As an added bonus, red lentils also cook a whole lot faster than other types of lentils, making this my go-to meal when I’m after something tasty, warm and protein-rich that requires minimal prep.

½ cup (100 g) red lentils

1 tbsp (15 ml) coconut oil

½ tsp mustard seeds

4–5 curry leaves

½ cup (80 g) sliced red onions

4 tsp (11 g) minced garlic

½ tsp turmeric powder

1–2 green chilies, sliced

1–2 dry red chilies

¼ cup (60 ml) water, plus more as needed

½ cup (120 ml) thick coconut milk

Salt, to taste

1 tbsp (6 g) desiccated coconut, to serve
