3 tablespoons olive oil

1 large onion, diced

1 red bell pepper, seeds and ribs removed, diced

2 carrots, diced

2 celery ribs, diced

3 garlic cloves, minced

6 cups Seafood Stock (page 32) or store-bought stock

2 tablespoons tomato paste

2 tablespoons Worcestershire sauce

2 tablespoons rum, preferably dark rum

3 tablespoons chopped fresh cilantro

2 teaspoons fresh thyme leaves

¼ teaspoon ground allspice

½ teaspoon hot red pepper sauce, or to taste

1 bay leaf

1 pound sweet potatoes, peeled and cut into 3/4-inch dice

1 cup cherry or grape tomatoes, halved

1¼ pounds thick white firm-fleshed fish fillets, such as cod or halibut, cut into 1-inch cubes

Salt and freshly ground black pepper, to taste
